The headless VNC plugin will always shot a blue screen only. You have to use the x11vnc backend. If you switched from Wayland to X11, it should work. If not, what errors can you see in the VeyonServer log files?

Presumably your projector is just duplicating your current monitor, correct? Set your projector to EXTEND your desktop rather than duplicate. Then you can show whatever you need to on the projector "monitor" and keep things you do not want students to see on your actual monitor on your desk.
